Ingredients
220g - Passata/Chopped tomatoes
40g - Spinach
40g - Red pepper and onion mix
2 - Whole eggs
4g - Spring onion, sliced
8g - Sliced red chilli
2g - Herbs of your choice
90g - Sourdough or bread (toasted)
1g - Pepper
1g - Salt

How to make it:
1. Add spinach and onion to a pan and soften until the onion brown.
2. Pre-heat the oven on grill to 200 degrees.
3. Once brown add the tomato sauce (homemade or store-bought), and bring to a simmer.
4. Add herbs of your choice, salt and pepper.
5. Crack the eggs evenly distributed into the pan and cook until the whites are opaque.
6. Put the pan into the oven, on the top shelf to grill.
7. Once eggs are cooked, garnish with spring onion, sliced red chilli & coriander.
